  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 2 tablespoons fresh parsley chopped, optional

  • Heat the olive oil in a large skillet over medium heat.
  • Season the chicken breasts with garlic powder, paprika, salt, and pepper.
  • Add the chicken to the skillet and cook for 5–7 minutes on each side, or until fully cooked and golden brown.
  • Reduce the heat to low. Sprinkle mozzarella and cheddar cheese evenly over the chicken breasts.
  • Cover the skillet with a lid and cook for 2–3 minutes, or until the cheese is fully melted.
  • Garnish with chopped parsley if desired.
  • Serve hot and enjoy!

You can substitute the mozzarella and cheddar with your favourite keto-friendly cheeses like provolone or pepper jack.
For extra flavour, add sautéed mushrooms or spinach before sprinkling the cheese.
Ensure internal chicken temperature reaches 165°F (74°C) for safe consumption.
