- Ingredients
- 1 ½ cups shredded mozzarella cheese for taco shells
- ½ cup cooked and crumbled Italian sausage
- ¼ cup cooked bacon bits
- ¼ cup mini pepperoni slices
- ½ cup shredded mozzarella for filling
- ¼ cup low-carb pizza sauce
- 1 tsp Italian seasoning
- Optional: chopped parsley for garnish
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Make taco shells: Place ¼ cup shredded mozzarella in small circles on the parchment paper, spaced apart. Bake for 5–7 minutes, or until edges are golden and bubbly.
Shape shells: Remove cheese circles and let cool for 30 seconds, then carefully drape over a spoon handle or taco rack to form taco shapes. Let set.
Cook filling: In a skillet over medium heat, combine sausage, bacon, and pepperoni. Stir in pizza sauce and Italian seasoning. Cook for 3–5 minutes.
Assemble tacos: Fill each cheese shell with the warm meat mixture, sprinkle shredded mozzarella on top, and optionally microwave for 20 seconds to melt the cheese.
Garnish with parsley if desired. Serve immediately.
Notes
You can use cheddar or a blend of cheeses for the taco shells.
Add veggies like sautéed mushrooms or green peppers for extra flavour.
Best served fresh, as cheese shells may soften over time.
