- 2 cups almond flour
- 1 tbsp baking powder
- ½ tsp salt
- 2 cups shredded mozzarella cheese
- 2 oz cream cheese
- 2 large eggs
- 1 tbsp apple cider vinegar
- 1 tbsp butter melted, for brushing
- Optional: sesame seeds or everything bagel seasoning for topping
Preheat Oven to 375°F (190°C). Line a baking sheet with parchment paper.
Melt Cheese – In a microwave-safe bowl, heat mozzarella and cream cheese for 30-45 seconds, stirring until smooth.
Mix Dry Ingredients – In a separate bowl, whisk together almond flour, baking powder, and salt.
Combine Wet & Dry – Add eggs, apple cider vinegar, and melted cheese mixture. Knead until fully combined.
Shape Rolls – Divide the dough into 6-8 balls and place them on the baking sheet.
Brush & Bake – Brush with melted butter and sprinkle toppings if desired. Bake for 15-18 minutes or until golden brown.
Cool & Serve – Let them cool for a few minutes before serving.
- If the dough is too sticky, refrigerate for 10-15 minutes before shaping.
