Ingredients
  

  • 1 cup ham finely chopped
  • 1 cup shredded mozzarella cheese
  • ½ cup almond flour
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 1 tbsp heavy cream
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • ½ cup crushed pork rinds for coating
  • 2 tbsp coconut oil or avocado oil for frying

Instructions
 

Prepare the mixture:

  • In a mixing bowl, combine ham, mozzarella cheese, almond flour, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  • In a separate small bowl, whisk the egg with heavy cream, then add it to the ham mixture. Mix until well combined.

Shape the croquettes:

  • Take a small amount of the mixture and roll it into small cylinders or balls.
  • Roll each croquette in the crushed pork rinds to coat them evenly.

Fry the croquettes:

  • Heat coconut or avocado oil in a pan over medium heat.
  • Fry the croquettes until golden brown and crispy, about 2–3 minutes per side.
  • Remove and place on a paper towel to drain excess oil.

Serve and enjoy:

  • Let the croquettes cool slightly before serving.
  • Enjoy with your favourite keto-friendly dipping sauce like garlic aioli or spicy mayo.

Notes

  • You can bake the croquettes at 200°C (400°F) for 15–20 minutes instead of frying for a healthier option.
  • Store leftovers in the fridge for up to 3 days and reheat in an air fryer or oven for best results.
  • For extra crispiness, double-coat the croquettes in pork rinds.
