- 1 cup ham finely chopped
- 1 cup shredded mozzarella cheese
- ½ cup almond flour
- ¼ cup grated Parmesan cheese
- 1 large egg
- 1 tbsp heavy cream
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- Salt and pepper to taste
- ½ cup crushed pork rinds for coating
- 2 tbsp coconut oil or avocado oil for frying
Prepare the mixture:
In a mixing bowl, combine ham, mozzarella cheese, almond flour, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
In a separate small bowl, whisk the egg with heavy cream, then add it to the ham mixture. Mix until well combined.
Fry the croquettes:
Heat coconut or avocado oil in a pan over medium heat.
Fry the croquettes until golden brown and crispy, about 2–3 minutes per side.
Remove and place on a paper towel to drain excess oil.
- You can bake the croquettes at 200°C (400°F) for 15–20 minutes instead of frying for a healthier option.
- Store leftovers in the fridge for up to 3 days and reheat in an air fryer or oven for best results.
- For extra crispiness, double-coat the croquettes in pork rinds.
