  • 2 cups almond flour
  • 3 large eggs
  • ½ cup butter or coconut oil for dairy-free option
  • ¼ cup heavy cream or almond milk for dairy-free option
  • ½ cup erythritol or monk fruit blend
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Cinnamon Swirl Filling

  • ¼ cup melted butter
  • 2 tbsp ground cinnamon
  • 3 tbsp erythritol

Cream Cheese Glaze

  • 2 oz cream cheese
  • 2 tbsp powdered erythritol
  • 1 tbsp heavy cream
  • ½ tsp vanilla extract

Instructions
 

  • Step 1 – Preparing the Batter
  • Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  • In a large mixing bowl, combine the almond flour, sweetener, baking powder, and cinnamon.
  • In a separate bowl, whisk together the eggs, melted butter, heavy cream, and vanilla extract.
  • Gradually mix the wet ingredients into the dry ingredients until fully combined. The batter should be thick but pourable.

Step 2 – Adding the Cinnamon Swirl

  • Pour half of the batter into the greased baking dish and spread evenly.
  • In a small bowl, mix together the melted butter, cinnamon, and erythritol to create the swirl mixture.
  • Drizzle half of the cinnamon mixture over the batter and use a knife to create a swirl effect.
  • Add the remaining batter and repeat the swirling process with the remaining cinnamon mixture.

Step 3 – Baking the Cake

  • Place the dish in the oven and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove from the oven and let it cool slightly before adding the glaze.

Step 4 – Preparing the Cream Cheese Glaze

  • In a small bowl, mix cream cheese, powdered erythritol, heavy cream, and vanilla extract until smooth.
  • Drizzle over the warm cake for the perfect finishing touch.

Notes

  • Use room temperature ingredients for better mixing.
  • Do not overbake, as almond flour can dry out quickly.
