- Main Cake Ingredients
- 2 cups almond flour
- 3 large eggs
- ½ cup butter or coconut oil for dairy-free option
- ¼ cup heavy cream or almond milk for dairy-free option
- ½ cup erythritol or monk fruit blend
- 1 tsp baking powder
- 1 tsp vanilla extract
Cinnamon Swirl Filling
- ¼ cup melted butter
- 2 tbsp ground cinnamon
- 3 tbsp erythritol
Cream Cheese Glaze
- 2 oz cream cheese
- 2 tbsp powdered erythritol
- 1 tbsp heavy cream
- ½ tsp vanilla extract
Step 1 – Preparing the Batter
Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
In a large mixing bowl, combine the almond flour, sweetener, baking powder, and cinnamon.
In a separate bowl, whisk together the eggs, melted butter, heavy cream, and vanilla extract.
Gradually mix the wet ingredients into the dry ingredients until fully combined. The batter should be thick but pourable.
Step 2 – Adding the Cinnamon Swirl
Pour half of the batter into the greased baking dish and spread evenly.
In a small bowl, mix together the melted butter, cinnamon, and erythritol to create the swirl mixture.
Drizzle half of the cinnamon mixture over the batter and use a knife to create a swirl effect.
Add the remaining batter and repeat the swirling process with the remaining cinnamon mixture.
Step 3 – Baking the Cake
Place the dish in the oven and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Remove from the oven and let it cool slightly before adding the glaze.
Step 4 – Preparing the Cream Cheese Glaze
In a small bowl, mix cream cheese, powdered erythritol, heavy cream, and vanilla extract until smooth.
Drizzle over the warm cake for the perfect finishing touch.
- Use room temperature ingredients for better mixing.
- Do not overbake, as almond flour can dry out quickly.
- Store leftovers in an airtight container for up to 5 days in the refrigerator.
- Reheat slices in the microwave for 10-15 seconds for a warm treat.
