Ingredients
  

For the Crust:

  • 1 cup almond flour
  • 1/2 cup butter melted
  • 1/3 cup erythritol or your preferred keto sweetener

For the Filling:

  • 2 cups cream cheese softened
  • 3 large eggs
  • 1/2 cup heavy cream
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1/3 cup erythritol or your preferred keto sweetener
  • 1 tsp vanilla extract

Instructions
 

Prepare the Crust:

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine almond flour, melted butter, and erythritol. Stir until the mixture forms a dough-like consistency.
  • Press the mixture into the bottom of a springform pan, creating an even layer.
  • Bake for 10-12 minutes, or until the crust is golden brown. Remove from the oven and set aside to cool.

Prepare the Filling:

  • In a large mixing bowl, beat the cream cheese until smooth and creamy.
  • Add the eggs, heavy cream, lemon juice, lemon zest, and erythritol. Beat until well combined.
  • Stir in the vanilla extract until fully incorporated.

Bake the Cheesecake:

  • Pour the filling into the cooled crust and smooth the top with a spatula.
  • Bake for 40-45 minutes, or until the center is set but slightly jiggly.
  • Turn off the oven and leave the cheesecake inside for an additional hour to cool slowly.
  • After an hour, remove the cheesecake from the oven and allow it to cool to room temperature.

Chill and Serve:

  • Refrigerate the cheesecake for at least 4 hours, preferably overnight, to set.
  • Before serving, top with fresh lemon slices or whipped cream for added flavor.

Notes

  • For a firmer texture, refrigerate overnight.
  • You can substitute the almond flour with coconut flour for a different texture, but reduce the quantity as coconut flour is more absorbent.
  • Feel free to use your preferred keto sweetener. Make sure to adjust the quantity based on the sweetness level of the sweetener you choose.
