For the Crust:
- 1 cup almond flour
- 1/2 cup butter melted
- 1/3 cup erythritol or your preferred keto sweetener
For the Filling:
- 2 cups cream cheese softened
- 3 large eggs
- 1/2 cup heavy cream
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 1/3 cup erythritol or your preferred keto sweetener
- 1 tsp vanilla extract
Prepare the Crust:
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine almond flour, melted butter, and erythritol. Stir until the mixture forms a dough-like consistency.
Press the mixture into the bottom of a springform pan, creating an even layer.
Bake for 10-12 minutes, or until the crust is golden brown. Remove from the oven and set aside to cool.
Prepare the Filling:
In a large mixing bowl, beat the cream cheese until smooth and creamy.
Add the eggs, heavy cream, lemon juice, lemon zest, and erythritol. Beat until well combined.
Stir in the vanilla extract until fully incorporated.
Bake the Cheesecake:
Pour the filling into the cooled crust and smooth the top with a spatula.
