Heat a large skillet over medium heat. Add chopped bacon and cook until crispy. Remove bacon and set aside, leaving some bacon fat in the skillet.
Season chicken breasts with salt and pepper. In the same skillet, add olive oil if needed and sear the chicken breasts until golden brown on each side and cooked through. Remove chicken and set aside.
In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
Pour in chicken broth and heavy cream, scraping the bottom of the pan to deglaze. Let it simmer for a few minutes.
Stir in Parmesan cheese until melted and sauce slightly thickens.
Add spinach and cook until wilted.
Return chicken and bacon to the skillet. Spoon sauce over the chicken and simmer for another 2–3 minutes.
Serve hot and enjoy!
